Harvested from December to March, it has an aromatic, fruity scent, not very strong but agreeable. Because of its excellent flavor, it is also called the “Sweet Black”. It can be used uncooked in all dishes but we suggest a quick heating to intensify its perfume. It is used in many international dishes, such as stuffings, meat baked in foil, and terrines.

How to Preserve Black Truffles
Wrap each truffle separately in absorbent paper and store them in a closed jar. Change the paper when it becomes damp. Keep fresh truffles in the refrigerator in the vegetable tray (at 2°-3° centigrade, 35°-37° fahrenheit). The truffles will remain fresh for a maximum of 4 to 6 days. When you are ready to use them, wash them carefully with water and a nailbrush, and dry them with paper.
Preservation for a longer time:
-Whole truffles: freeze truffles after having cleaned and dried them. When you want to use them, slice them very quickly before they are completely defrosted.
-Sliced truffles: see cooking instructions below and then freeze the truffle. You can store it up to 2 years in the deepfreezer.
Cooking instructions: slice the cleaned truffle. Put the slices into a frying pan with a little olive oil, a clove of garlic, and a pinch of salt. Warm for about 1min.
